Mushroom and Shrimp Chowder

Serves 6


  • 1 pound fresh Brown Beech mushrooms, sliced
  • 1 1/2 cups of water
  • 1 tsp. salt
  • 1/4 cup chopped onion
  • 3 tbsp. butter
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup heavy cream
  • 2 cups chopped cooked shrimp
  • 2 tbsp. dry sherry


Combine mushrooms, water and salt in a saucepan, bring to a boil. Reduce heat and cover, simmer for 10 minutes. Drain mushrooms, reserving liquid. Saute onion in butter. Add flour, salt and pepper. Mix well. Stir in reserved liquid gradually and cook, stirring constantly until mixture boils and thickens. Remove from heat, add cream, shrimp and mushrooms.
