Cheese and Mushroom Bake

Serves 6


  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 3 tbsp. butter or margarine
  • 1/2 pound Lemon oyster mushrooms, sliced
  • 4 cups day old bread, cubed
  • 2 (8 oz.) cups sharp Cheddar Cheese
  • 2 eggs
  • 2 cups milk
  • 2 tsp. dry mustard
  • 1 tsp. salt
  • 1/2 tsp. pepper


Preheat oven to 250 degrees. Saute onions and celery in butter. Add mushrooms and cook until tender. In greased 2-quart casserole dish, layer half of the bread, then mushroom mixture and cheese. Repeat layers. Beat eggs, milk, seasonings. Pour evenly over bread mixture. Bake 45 minutes.
